SOIL

The grapes were harvested entirely in our Pietrauta vineyard, of sedimentary origin, with East, South-East exposure, situated on a hilltop near the medieval town of Montefalco, at 280 meters above sea level.

YIELD

55 quintals of grapes per hectare.

Kg. 0,9-1 per plant.

HARVEST

October.

Manual in small crates.

WINE-MAKING

Fermentation on skins for 8-9 days.

Alcoholic and malolatic fermentation in stainless steel tanks.

AGEING

In barriques for 18 months and in stainless steel tanks for 9-12 months.

BOTTLE-AGEING

In bottle for 18 months.

RELEASE

4 years after harvest.

MATCHES WELL WITH

Red meats, roasts, game, duck and wine-braised meats. Hard cheeses like parmesan or cheddar.
